Rosulja-rosignola has as golden yellow color with green tones. The scent is strong and very complex, delicate and distinctive, characterized by elegant notes of artichoke, freshly mowed grass and a marked balsamic aroma of mint, basil and oregano. The flavor is fine and resolute, with ample vegetal overtones, unripe tomato, celery and green almond in closure. It reveals powerful bitterness and restrained peppery notes.
We cultivate about 1,800 olive trees in five different olive groves. To fertilize them we use a special self-produced fertilizer obtained from a fermented olive-mill pomace. All our oils are milled in our own olive mill, which is situated in one of the groves. Olives are picked exclusively by hand and milled within a few hours. We produce eight single cultivars: Leccino, Pendolino, Frantoio, Rosulja, Itrana, Ascolana, Bjelica, Moraiolo, and a mixture of our best olive oils, our Blend.
